Potatoes
The potatoes we know today started their journey in Peru in the 1500s where they had been cultivated since the last ice age. They were introduced into Europe in the 16th century, where they ended up playing a pivitol role in great wars and great famines. By 1720, the potato had made its way back to North America and was in full commercial production a hundred years later. Unfortunately, most of us think of red or white potatoes as the two main "varieties". In fact there are still some 4000 distinct varieties in clutivation, but only a small subset readily available.
In our zeal for biodiversity and preparing for the impending climate adaptation, we have cultivated more than 22 varieties, mostly heritage varieties. We are proud to be a research site for the Crop Climate Project.
